Cajun Chicken Recipe

Does anyone have a recipe for cajun chicken?

I thought I would do a tomato salsa to go with it, but what would you put through the rice to spice it up?

This is more colourful than spicy, but what about putting turmeric in the rice water so the rice turns out yellow, and mixing something like finely chopped spring onion and fresh coriander through it when it's cooked and drained?

Maybe not what you wanted - personally I always go for the rice being a nice soft calm blanket to offset the spiciness of the chicken.

Thanks misshardbroom, same here with the rice, would prefer plain basmati, but DH said he wants something tasty!

Had thought about coriander, but not about the spring onion. Will put a bunch of each on my shopping list tomorrow.
