Risotto suggestions

Hi

I make a lovely seafood risotto and recently graduated to mushroom, but I'd love to get any suggestions for alternative versions?

DP is coeliac so it's something he really loves and can eat without worry.

I made butternut squash and bacon last week and it was yummy. Hoping to do chicken soon.

Butternut risotto - pre roast the butternut then stir in right at the end.

Spinach and courgette - surprisingly good. Slice your courgettes really really fine and add with the spinach a few minutes before the end so that they can cook through.

Google Nigella's lemon risotto - absolutely delicious. And if you want, you can add some parma ham or fried bacon at the end to up the protein quotient.

Nigella has a nice pea one in How To Eat.
Also if you look on the BBC Good Food website there's a couple of suggestions for oven baked ones, which while they would make a purist shudder, do save a lot of stirring effort.

What kind of seafood do you put in yours? Have never tried seafood risotto

I do aubergine and courgette and minced lamb with tin of tomatoes. tis yummy with cheese on the top.

smoked salmon, white wine and lemon risotto- bit seafoody tho maybe if you are sick of it?

mushroom risotto is nice with bacon too

Peas (you can add bacon/pancetta into that too if you like). Broad beans are good too (you need to shell them right the way down, though, IMO).

This thread is making my mouth water! Thanks for all your suggestions, some wouldn't have occurred to me!

Lucysmam, I kind of cheat for the seafood one and use the pre-cooked pack you get from Tesco's chilled section. It has prawns, mussels and squid rings. As we're pigs I normally add some more cooked prawns for good measure!

Prawn and pea with lemon juice and fresh mint and basil added at the last minute. It's a Jamie recipe I think.

We do a roast butternut squash one with sage (fry up some crispy sage eaves to garnish - yum).

I think chicken is a bit of a disappointment though...
