Banoffi Pie
Get 1 pack of digestives, a large (pint) pot of double cream, 6 bananas, a small bar of dark choc (you only need about 10g...so the rest is for you!) and a can of Dulce de Leche (next to the condensed milk and made by carnation too)
Blitz about 1/2 the biscuits with two tablespoon of melted butter and 1 tablespoon of golden syrup/maple syrup.
Pack into a loose based tart tin (about 12")
Empty can of caramel on top and smooth over (knife dipped in hot water makes it easier). Slice bananas thinly on the diagonal and arrange on top of the caramel.
Whip cream with 1 heaped tablespoon of icing sugar(sifted for lumps) and 1 teaspoon of vanilla extract. Pile whipped cream on top of bananas smooth over a bit - doesn't need to be too neat.
Grate choc over before serving.
Will keep in fridge for up to 2 days.
I made this for New Years Eve dinner after fajitas and it went down a treat. Takes less than 20 mins to make.

we had the most gorgeous Sicilian lemon sorbet the last time we went to friends' for dinner. It was Carte D'Or - she served it with fresh fruit - it was gorgeous and no cooking involved at all

it really was nice - I'm not a big sorbet fan really but that converted me! You couod serve it with blueberries - that's a nice combination

melting choccolate puddings are real crowd pleasers and can be made in advance. Ditto for baked cheesecake.
