I think they should be used quickly - otherwise leave them dried??

i rehydrated a whole packet and i only needed half

I hate waste (assuming you do too)... can you make something else (or double what you're making now) and freeze it??

Yes, freeze them with their juice and they will be fine for soup or casseroles.

oh i have drained them and put the juice in the soup
