I love minestrone does anyone have a good recipe - please.

Fry potatoes, carrot and onion in olive oil. Chuck a bit of bacon cubey stuff in.
Add beans (red kidney, cannellini, whatever you've got a tin of)
Any other veg you have kicking round.
Stock.
Boil up then simmer.
Add cabbagey type veg and pasta last off.
Serve with grated cheese.x

Would you use a meat stock?

No, I just use a veg stock cube as I don't trust what sort of meat they put in the "meat" ones!

This is easy.

Lightly sweat 2 chopped leeks, 2 chopped sticks of celery and 2 cloves of garlic in some olive oil for eight minutes.
Add a tin of tomats, 1.5ml of veggie stock, some uncooked macaroni and (optional) berlotti beans. bring to the boil and simmer for ten to 15 mins.
Add tablespoon of pesto and some chopped mangetout and some black pepper. Simmer for 2 mins.
Sprinkle grated parmesan over the top.
Delicious!
