Cheese substitute in pasta sauce recipe ..

My (Nigella) pasta recipe calls for parmesan cheese (mixed with cream) ... I don't have parmesan, only philadelphia, mozzarella or cheddar. Which do you reckon would be best. Really simple recipe just mix cream & parmesan with pasta, ham and peas - mmmmm. TIA.

Cheddar. Thats what I use anyway but mix with milk and flour for just a simple chesse sauce.
