Sweet potatoes - Moroccan Vegetable Stew.
Onion, ginger, ground cumin and coriander, chilli if liked fried, then add chunks of butternut squash and sweet potato for 5 mins.
Then can chick peas, can tomatoes, some stock or water, bubble until veg cooked.
Finish off with prunes in for last minute and fresh coriander.
Serve with buttered couscous.
