anyone know what Rice Mirin is please?

The recipe that I planned on cooking tomorrow needs it but I couldn't find any in the shop today. I'm guessing it's similar to rice wine as the measurement needed is in mls.

yes it's rice wine i believe. though it might be posher as it comes in smaller bottles. is there a waitrose near you?

it is sweet rice wine.

If you have rice wine then you can add a quarter of a tablespoon of soft brown sugar to each tablespoon of rice wine in your recipe and you have the same thing as mirin, which is a rich sweet rice wine.

I reckon any old sake will be fine, I'm not even sure the sugar is that necessary, taste and see/ Or maybe other sake has sugar in too and that's why I can't tell the difference in cooking.

thanks for the extra replies. I don't think to ask websites like Jeeves, Wikipedia etc - I just always come to mumsnet now, safe in the knowledge that someone on here will know the answer to pretty much anything

Had to google rice mirin myself as couldn't see any in our Waitrose, you're not cooking the Teriyaki fish tonight as well are you?

have bought chinese wine, hope it will be ok!

Indeed I am cali. I got some rice mirin in sainsburys this afternoon. Fish is marinading as we speak!

It was lovely but think would maybe add more ginger and some chili to the marinade the next time I make it, was very quick and easy to make.

Hope you enjoyed it too, will try Sainsbury's for the rice mirin but chinese cooking wine seemed to work well too.
