Pineapples - any recipe ideas?

I have ended up with 2 pineapples and don't know what to do with them. I made pineapple upside-down cake last week and ds isn't that keen on it (I'm sure he's not actually related to me!!!).

I need some ideas to use them up before they go mouldy!

4oz plain flour
4oz plain wholemeal flour
1 tsp baking powder
1 tsp bicar soda
1tsp cinammon
1 tsp ground ginger
1/2 tsp salt
175ml veg oil
3oz caster sugar
4 1/2 oz grated carrots
8oz pineapple - canned or frh
100g raisins

oven at 180C
Sift flours,bicarb,cinnamon,ginger and salt and mix well.
beat oil,sugar and eggstogether until well blended.
add carrots, pineapple and raisins.
gradually add the flour mix beating to combine just enough to combine all the ingredients.
Pour into muffin trays. Bake for 25 min.

Based on annabel karmel - they are lovely and have made without wholemeal, just double the plain.
