Excess butter icing ... can I freeze it?

Made too much - don't want to put it in the bin. Can I freeze it and then use it on the next batch of fairy cakes?

I have done and it's fine. But don't do what i did once and thaw it in the microwave - it went really odd!

Yes, just let it defrost at room temperature and it will be fine.

yes it does but you can always do what my DH does- eats it spread on toast! I froze my last lot in ice trays then popped them into a plastic bag then when they defrosted it was faster and DH also nicked them regularly for his toast.

I don't know why that should sound so abhorrent ... but it does!! Am sure DD1 would absolutely love it ... especially if I sprinkled hundreds and thousands on top of it - ha!ha!
