4sr flour 4oz softened butter 4oz caster sugar 2 eggs 1tsp vanilla essence (optional).

Blend them all together

Bake at gas mark 4 in small cake cases for about 10 - 12 mins

Queen Cakes

8oz marg, 8oz sugar, 12 oz flour, 4 eggs

mix marg and sugar together with handmixer, add beaten eggs and then fold in flour

put into those little paper cases.

Cook in oven at 190 Degrees for about 15 - 20 minutes. Every oven is different but you will know if they have turned a lovely golden colour. Makes about 28 approximately.

This is my mums recipe. We have eaten these for years. My children love them too.

You can put icing sugar on top or some melted chocolate with sprinkles.

Easy to make. Enjoy.

Sorry brokenrecord I didn't read your post until after I put mine in. Our recipes are similar, I think I use more flour.

Now for the scones:

1 lb of Soda Bread Flour
Half pint of Buttermilk
a handful of sugar
2 oz soft marg
1 egg

Sift the flour into a bowl
rub in marg
stir in sugar
mix in the egg and little by little add buttermilk

Knead the mixture into a soft dough and turn out unto a floured surface. Roll it out to a thickness of 2cm. Cut out scones to the size you require.

Cook in oven at 200 Degrees/Gas Mark 6 for 12 - 15 mins - again every oven is different - keep an eye on them.

This makes about 12 or 13. I usually make double the amount and freeze them. Lovely with some fresh cream and jam.

I like the Victoria sponge type recipe because it is so easy to remember. 4 of everything plus 2 eggs and bake at gas mark 4. Unfortunately showing my age now with the weights....

Not a problem. Can I recommend a good website I found recently. It is called Traybakes.co.uk and has some nice biscuit type recipes - some you have to bake and others not - things like fifteens, millionnaires shortbread etc.
