Chicken soup recipe please!

I've got a lot of stock which I made from the Christmas goose, and need to use it up. I'm going to make a risotto, but there's so much I could make soup too... But I've never made chicken soup before.

I'd be really grateful for your fav. chicken soup recipes, please!

this is my mum's recipe from the states (and an old childhood favourite!!):

chop onion and celery. add chicken thighs and legs. cover with water plus 2 inches in a pot. add dried parsley and salt and pepper. boil 1-1.5 hours (you could probably just add celery, onion and parsley flakes to the stock and boil until they're tender).

Then pick the meat off the bones, skim off the fat and add the meat to the stock. add chopped carrots, a packet of vegetable soup mix (make sure it has red pepper in it, it adds a lot of flavour!) and two chicken bouillon cubes. boil until the carrots are tender. then add egg pasta (has to be made from eggs or all the wheat will dissolve in the broth) boil until they're tender. adjust flavour by adding salt and pepper.

made some just the other night as it's amazing when you've got a cold. hopefully you'll like it as much as my family does!
