What do I serve with this?

It is DH's birthday soon and I want to make him a nice dinner.

I am making
scallops seared in galic butter
Beef wellington with dauphinois potatoes and gravy (what elsedo I serve with this?)

and trifle for him and not sure what I am having (I hate trifle and he has requested it so have to make it for him)

green vegtables, mange tout, broc, green beans to add colour to the plate

asparagus and baby corn

or carrots, butternut squash and celeriac roasted in olive oil and herbs

ooh roasted veg, hadn't thought of that, DH loves them.

DP, who is a chef, says roasted baby vegetables/spiced braised roast cabbage (with sultanas and apples)/honey roast carrots with wholegrain mustard...

He's getting a bit excited now, I think I might be having beef wellington for dinner one day soon!
