Does anyone have this book and a few minutes to let me have the recipe for Honeycomb - I think she calls it Hokey Pokey? I would be INCREDIBLY grateful!

Hokey pokey

100g caster suagr
4 x 15ml tablespoons golden syrup
1 1/2 teaspoons bicarboante of soda

  1. Put the sugar and syrup into a saucepan and stir together to mix. You mistn't stir once the pan is on the heat though.
  1. place the pan on the heat and let the mixture first melt, then turn to goo and then to a bubbling mass the colour of maple syrup - this will take about 3 minutes or so.
  1. Off the hat, whisk in the bicarb abd watch the syrup turn into a whooshing cloud of aerated pale gold. Turn this immediately onto a piece of reusable baking parchment or greased foil.
  1. Leave until set and then bash at it, so that it splinters into many glinting pieces.

Makes 125g.
