I have got a load of clementines left over from Christmas, anyone know if the Nigella cake freezes?

TIA

I am pretty sure that it would freeze OK, you should wrap it well in greaseproof paper, then a freezer bag. But if I were you I would boil the clementines and then freeze at that stage. It's dead quick and easy to make from that point and will be a bit nicer freshly made. I should really do this with my own clementine mountatin.
