Can you leave bread to prove overnight?

I have an urge to make bread, but can I leave it for 12 hours to rise, rather than the usual 3? I want to make it now and cook it in the morning.

Yes, put it in the fridge, knock it back in the morning, leave to rise again and bake.

But my reply is probably a bit late if you wanted to eat the bread this morning.
