What cheapo meals can I batch cook and freeze?

Going to have a cooking weekend to fill the freezer, in an attempt to stop me having to shop for dinner at the last minute and spending loads.

I'm thinking:

  • Muffins (for packed lunches)
  • Bread - if anyone has a foolproof recipe and timings (no breadmaker) I'd be grateful, as mine keeps ending up too dense and too dry!
  • Bolognese
  • Veg or meat chilli - any good recipes?

Any other ideas gratefully received! Cheap meal ideas/money saving food tips especially - DP and I are going to have a month trying to live on the budget we'd need to if I become a SAHM, and we will be poooooor. please help me not have to go back to work!

Big pan of veggie soup, then divide it into smaller portions for freezing.

Veg chilli is a good one - Nigella's recipe is decent, although I've never tried freezing it and tbh I usually don't bother with a recipe.

If you make a big batch of tomato sauce and freeze it in portions, you can turn it into chilli, bolognaise, ratatouille etc after defrosting.

simple tomato sauce
[to eat with fish, pasta, roast veg. couscous]
dahl or chickpea curry
soups - leek and potato/chickpea and chorizo/chicken and veg

Chilli is great for the freezer.

Chilli

As are burgers (much tastier than shop brought and no eyebrows!)

Bolognese is great.
Shepards Pie
Fish Pie
Stews/Casseroles can be made with cheap cuts of meat and all meals can be bulked up with pulses and grains and veg.

Thanks for the ideas! Off shopping now, DP is going to have to entertain DS tomorrow while I have a cook-fest.

Yes - that's my plan too, having suddenly realised that I'm back at work on Monday - arghhhhhhh!

I intend to get the slowcooker full of lentil soup and let that simmer away whilst I make a huge pan of tomato sauce.

Can you freeze cheese sauce, does anybody know?

I have frozen cheese sauce. It just needed more milk in it when defrosted, otherwise fine.
