Have bought a huge pannetone instead of traditional Christmas cake, but don't know what to do with the leftovers. Can't do trifle as double cream hard to find here.

Does anyone have any ideas?

How much do you have leftover?

I have a fab recipe (making it tonight for our NYE party!) for Sexy Toffee Pudding.

slice panetonne
mix half a pint of cream and half a pint of milk

Make toffee sauce:

4 oz butter
4 tablespoons golden syrup
4 oz soft brown sugar

Heat through till butter and sugar have melted into the syrup

In a shallow dish, put a layer of panetonne and then pour over half the milk/cream and then half the toffee mixture, then put a second layer of panetonne on top and the rest of the milk/cream and toffee.

Bake in a moderate oven for 20 minutes and then serve with ice cream or cream.

Delicious!
