Three course dinner for NYE for 8 people, not too complicated. Any suggestions??

I want something nice but don't want to spend all evening cooking. To complicate matters, one guest is a vegetarian but will eat fish, another does not really like fish but will eat smoked salmon. I accept I will need to cook two things but I want to find something that's a variation on the same thing. DH has suggested pasta but I'd prefer something slightly more fancy.

Any ideas gratefully received.....

smoked salmon, salmon and avocado mousse, followed by confit of duck (can do confit of salmon) with creamed potatoes and stemed french beans, the either vanilla pannacotta with rapsberry coulis of melting mocha fondant puddings. If interested in any of those I can type out the recipes.

Why don't you get a really good take away and a few bottles of decent wine?

Maybe make a pud yourself?

No one will mind and you'll all have a really relaxed eveing.
