I made some recently. There are loads of recipes on teh internet, but they basically include butter, sugar, milk, condensed milk and vanilla.

The trick is to get the sugar temperature right, and to beat it for ages as it cools.

I have never in my life heard of water in tablet, that recipe is also for bulk.

Dissolve 2lbs of sugar with 4 oz's of butter and half a teacup of milk.

Do this very slowly on a very low heat. It could take up to an hour but it never sticks or burns.

When the sugar has dissolved, (no longer crunchy against the pan,) add a tin of condensed milk.

Again cook on a very low heat, no need to stir, until it is a dark brown colour.

Take off the heat and beat it for a good while. It will start to feel a little grainy and get thicker as it gets cooler.

Pour into a flat dish.

There is no need to add vanilla.

A low heat would be 1 or 2 on an electric hob and just a peep on a gas one.

Hope this makes sense.
