If you make a white sauce you could do variations of any of the following

Hamd Cheese
Chicken and Mushroom
Cheese and Onion

I had some years ago which was just cold shredded chicken mixed with mayonnaise and a tiny bit of curry powder - really nice!

Yesterday I did chicken in white sauce and prawns in blue cheese sauce.

Mushrooms marinaded in olive oil and lemon juice
Tuna mayo

Basiczlly anything in glop will do.
