Help Stupid question re: cooking gammon joint

So I have a lovely gammon joint except the bugger is waaay too big for the pot I have. So does this sound ok-

I put it in a cast iron casserole pot, covered it in honey and soft brown sugar and apricots and more or less filled the pot with water.
Since I cant put the lid on as the joint stands too proud I instead put the pot inside my roasting tin which I also put some water into and put foil over the top of it so that its more or less sealed in.
Now I intend to pop this in the rayburn overnight and just put it on tickover which is pretty much just short of stonking and hotter than warm.
Do you think it will be ok? I would normally put it in a slow cooker but having given that back to my mother now that I have the rayburn I am a tad stuck.

Could you check it and top up the liqour before going to sleep?

Maybe check it in the early hours?
