Can I peel the potatos today for tomorrow? How do I keep them "fresh"?

In a desperate attempt to do as little as possible tomorrow can I peel the potatos today and keep them fresh somehow? How?

maybe keep them in cold water? But it doesn't take that long to do, does it!

yes put them in ice cold water and they will be fine. I would do it late pm though

I always do my spuds the day before. they are fine in a pan of water.

I peeled and parboiled mine last night and have them in the fridge.
Just peeled they'll be fine in water.

MamaG - there are 8 people to peel spuds for, so 16 potatoes and I HATE peeling potatoes so that's a lot of potatoes.

Echo what the others have said - in a pan of cold water.

For one day it doesn't really matter about losing vitamins etc. Anything for a little less stress on Christmas morning.

Doing all ours today too. Keep in water. On a normal day if we have pots for dinner I always peel in the morning and leave all day in some water, they'll be fine

yes i do this too but change the water in the morning for some fresh
