Has anyone got a good tried and tested recipe please? I have fresh cranberries ....

This is a river cottage one. I love this recipe although admit I mess with the sugar quantity. Hate overly sweet cranberry sauce and can never tell how sour the cranberries are until they are cooked. So, I would follow it below but hold back a little sugar until near the end just in case it is sweet enough. Easy to add more but a pain if need to start adding lemon juice etc to unweeten it later.

Ingredients:

300g of fresh cranberries
4 clementines (juice and zest)
120g white granulated sugar
25-50ml of Port (to taste)
Method:

Wash the cranberries and discard any iffy fruit.
Put the cranberries in a saucepan.
Wash the clementines and remove the zest (just a little off each fruit to give you about half a teaspoonful from them all). Squeeze the juice and add the zest, pulp and juice to the cranberries.
Add the sugar and stir well.
Bring to a gentle simmer, stirring to dissolve the sugar. Taste the sauce at this stage, if you find the sauce is to tart for your taste, add a little more sugar.
Pop on the lid and simmer for 15-20 minutes until all the cranberries are soft and splitting. Some of them will cook more quickly than others. Stir the sauce gently every five minutes or so. When the sauce if ready, remove from the heat and stir in the port.

Nigellas redder than red cranberry sauce - I made it yesterday and it tastes yum

serves up to 16 i have a child who eats turkey with her cranberry so I have made half amount for the 3 of us.

1x 340g fresh cranberries
200g caster sugar
45 ml cherry brandy
75 ml water

put everything in the pan, bubble until berries pop stirring with wooden spoon. Should take 10 mins

This will thicken when cool so do not worry if runny.

Give sauce a good whipping to crush berries. Test to see if it needs more sugar or lemon juice if too sweet.
