Freezing bread doug?

Is it possible to freeze dough made in a breadmaker?

I have a vague recollection that you can freeze bread dough after the knock-back and before the second rise? Is this so?

Yes should be fine. I always do this with pizza dough as my machine makes far too much for one pizza!

Let it thaw overnight in the fridge.

Well, I'd feel diffrently if he had just praised my home-made tear'n'share bread when I made it a couple of months ago, rather than saying nothing then, and now insisting on serving it to our million guests on Boxing Day!

Do I shape it first, so that it proves as it thaws, or do I reknead and then shape etc?

I've always rekneaded and shaped after thawing, but I guess there's no need to if you want to do more preparation in advance.

I'm always more short of space in the freezer than I am of time after thawing!

I'm now picturing hundreds of little un-risen rolls blobbing together in the freezer and me trying to desparately separate them as they start rising uncontrollably in front of my eyes...
