What can I make out of Gruyere Cheese, Double Cream & Bacon?

Want to make something nice for Christmas Eve dins but my Nigel Slater recipe has not worked out as I could not find Chicory anywhere!

I have bought all the other ingredients so am now wondering what I can make out of these ingredients - can go shopping tomorrow to add other bits.

Some sort of quiche, if you add egg, and buy (or make) pastry?

I'd do a form of spaghettin carbonara with them
