Shortbread recipes

Was thinking of making some for DP as he loves shortbread, especially lemon shortbread

Any recipes? Never made this before. Was just going to make cookies but mine always, no matter how rigidly I follow the recipe, turn out like flat, plain, dry slabs of pastry

Do you have Delia's Complete Cookery Course? I use her recipe in that and add lemon zest. Is very good. Can post it if you need it.

These are realy nice. You could use the plain dough on its own or the choc dough on its own too. Adding lemon zest to the plain dough would lead to lemon shortbread, though to me that sounds rough.

While we're at it, does anyone have a good recipe I can use cookie cutters on, without having them stick to the cutter and making me cross?

I might have a crack at those chocolate jobs.

Cookie cutter tip, before you cut, lightly dip the cutter in flour ... no sticking!
