A question about baking biscuits

Just made some biscuits (basic recipe, butter, sugar, flour, egg) and they have turned out more cake-like like rather than crunchy like a biscuit. Did I not add enough flour or just beat it all for too long? Any help appreciated

I hate when that happens but am not sure what casues it. Did you use plain flour?

I always stick to my trusted recipe for cut out cookies - they keep their shape but are delicious. Do you want the recipe?

possibly too much wet ingredient vs dry ingredient?
I have a recipe for oat cookies, I use banana in place of some of the sugar and they always come out like soft cookies, because of the banana.

Not much help - maybe your egg was too big?

These are nice and not too hard to make . Either the chocolate of plain dough would make yummy biscuits on their own too.

This works every time.

Ingredients

You can freeze the dough before cooking

100g/4oz slightly softened butter
50g/2oz caster sugar
175g/6oz plain flour
pinch of salt
a few drops of vanilla essence

For the icing:
100g/6oz icing sugar sifted
½tbsp lemon juice or water

Method

Preheat the oven to 180C/350F/Gas 4.

Beat butter and sugar together until thoroughly mixed. Add vanilla essence.

Sift together flour and salt and mix this into butter mixture to form fairly stiff dough. If the dough is too dry add a little water.

Form dough into a ball, then roll out thinly on a floured surface Cut into shapes.

Arrange on greased/lined baking sheet & bake for ~ 12 to 15 mins or til lightly golden.

To make icing, put the icing sugar in a bowl with enough lemon juice or water to make a good spreading/ piping consistency. Spread or pipe icing onto cooled biscuits
