Ideas for Boxing day salads /coleslaws etc please

Fancy making my own salads for Boxing day ,any recipes would be appreciated.

crispy bacon bits, spinach, lambs lettuce, croutons, parmesan , basil and tomato with olive oil

couscous, roasted veg, chilli oil and feta

baby new potatoes, mayo, red onion, capers

Small cauliflower florets cooked in water coloured with turmeric, add to mayo flavoured with curry powder, sultanas and chunks of apple - it's lovely.

coleslaw - cabbage, carrot, onion, mayo, freshly squeed OJ, handful of salted peanuts.
