what did Nigella soak her turkey in?

do you mean the big bucket or the ingredients ? (which to me looked like a few herbs and a lemon)

I half-watched last night - water, salt, sugar, orange juice, cinnamon and ermm. can't remember the rest.

sorry, can't find the recipe on bbc, I do have a cold though

it's basically water, orange juice, salt and sugar plus any other christmass spices you want to lob in. Personally I thingk the water/salt/sugar combo would do it

could you do that with a crown? I have never cooked one, but we are at MILs and I am cooking the dinner and that is what she has bought - I've always avoided them as I thought they would be impossibly dry

Haven't watched, but assume it's her brining recipe, which I have used a few times. Turkey always turns out fab.

Will try and dig out recipe for you later (feeding baby at mo) - it's in 'Feast'.

Hi from her Xmas book she soaks her turkey in:
6 litres of water
250g Maldon salt or 125g ordinary salt
3x15ml black peppercorns
1 bouquet garni
1x15ml tablespoon caraway seeds
4 cloves
2x15ml tablespoon allspice berries
4 star anise
2x15ml tablespoon white mustard seeds
200g caster sugar
2 unpeeled onions quartered
1x6cm diced ginger unpeeled
4x15ml tablesspoons of maple syrup
4x15ml tablespoons runny honey
stalks from bunch parsley *optional

Glaze: 75g goose fat or butter
3x15ml maple syrup

Thats for a 12LB turkey

Leave it somewhere cold for 2 days.
