Quick advice please! How can I cook sweet potatoes for tea?

Am bunging some salmon fillets in the oven, have some sweet potatoes and thought they might be nice with it. But have never cooked it before, apart from roasting it for baby dd3 and scooping out the insides. How to cook it for the rest of us to go with the salmon? Quick and easy as possible please.

Use as jacket potatoes or roasted potatoes or mash.

Just peel, cut into large dice (1 to 1.5 inches, about), toss in a little melted butter or olive oil and bung in oven for 40 mins or so. Turn once or twice.

i peel them, put in a roasting dish, drizzle with olive oil, brown sugar and honey and bung in the oven

Put them in the oven whole and with skins still on - when baked scrap out the middles, being careful as they will be really really hot, and mash up a bit.

Peel and cut into wedges/large chip shapes. Put on baking tray, drizzle with olive oil, and sprinkle with dried herbs. Then cook at around 180-200 for 20-25 minutes.

I reckon they are plenty sweet enough without sugar and honey - maybe lulumama is making dessert?

baked - don't take as long as normal potatoes. Add a big dollop of creme fraiche or philly cheese.

Wow, thanks everyone for quick and helpful replies. There seem to be two schools of thought on whether to peel or not. The skins don't look that appetising, but would love not to have the faff of peeling if I can get away with it . What do you reckon?

I have to admit I don't peel for me or DH, but DS is fussier...

Don't peel, do them as baked potatoes (don't forget to stab them) and be aware that they ooze everywhere. Split them and fill with soured cream, fresh red chilli, a squirt of lime juice and loads of black pepper. Yum - am making myself hungry.

I wouldn't do this with Salmon, but mashed sweet potatoes with a little butter and a pinch of cinnamon go really really well with lamb chops, or lamb kofta kebabs and a greek salad
