What's bread sauce sposed to taste like?

Never made it before, never eaten it as I didn't like the look... but we're hosting Christmas this year and I watched Nigella doing hers earlier so I did some, roughly following the recipe.

and the consistency looks ok but it's a bit sweet and puddingey. Maybe too much nutmeg? Is it sposed to taste of much?

onion and a little clove

Hmm bread sauce..yum

It should taste of bread (ho ho ho) and a bit of nutmeg

I didn't see Nigella's version but she does tend to make things a bit too sweet sometimes. Try Jamie Oliver or Delia for another recipe to compare.

i like it quite strong and clovey/nutmeggy. i use about a dozen cloves steep the onion/cloves longer than she does - until the milk's cool. i add salt and pepper with the breadcrumbs, then double cream and butter before serving.

did she add salt? without it could be sweetish i suppose.

i'm lucky, no-one else likes bread sauce in our house so is mineallmine

well i won't be doing any more, it was a one-night-only jobby as there was a stale loaf in the house. If I can think of a way to make it a little less sweet (salt?) I'll freeze it now and serve it up on the day.

It's got onion in it and the milk had cloves in when it was simmering

oh well in that case it sounds about right. Thank you. I'll also do the cream and butter thing before serving.

Bread sauce is one of the very few things that I make from a packet.

I think it's because the recipe I have says to stick a million cloves in an onion and then........STOP, too much effort, and then I don't read any further.

If I hadn't watched Nigella earlier on it was defo something I was going to buy but as the run-up all seems quite leisurely at the moment and I knew we had stale bread and cloves so I gave it a go. By 3 o'clock next Thursday I'll probably be past caring

i don't get bread sauce. it's like having a small pile of vomit on the side of your plate.

Oovavu · 18/12/2008 23:36

agree. I was thinking it looked more like porridge, but vomit will suffice

but the in-laws like it so....
