Just tried to make a chocolate roulade and the sponge was lovely. Tried to roll up and it just fell apart. What are the rules around rolling up swiss roll/roulade please. As cost me a fortune and now can do nothing with it.

Did you roll it up as you took it out of the paper?

did you roll it quite loosely? I put slightly damp tea towel on top if it is sitting for a bit before rolling??

I take it off the paper as soon as it comes out of the oven and put it onto a tea towel and roll immediately. When it's cool you can CAREFULLY unroll it and fill it!

As for this one, it's not ruined! Turn it into a lovely pile of chunks of roulade, cream, chocolate shavings etc? It will taste just as good!

PS. fwiw I think they are meant to crack a bit

There is no way that the roulade would have rolled, even if I had put a damp tea towel on it. Are you supposed to roll towards you?
