150g long red chillis, desedded cut into 4
150g red peppers, cut in rough chunks
1kg jam sugar
600ml cider vinegar

makes 1.5l - need 6 x 250ml jats sterilised

Pulse chillis finely in food processor. add red pepper and pulse again

dissolve sugar in vinegar in pan over low heat without stirring

add chilli-pepper mix to pan. Bring to boil, and leave at 'rollicking' boil for 10 mins.

take off heat and allow to cool. after about 40 mins it should have started tojellify andchilli bits disperse through mix.

put in jars then seal.

  1. sterilize jars (6x250ml sealable jars with vinegar proof lids)

2)deseed and cut into 4 pieces, 150g of long fresh red chillies. pulse in food processor until finely chopped.

3)desedd and cut into rough chunks, 150g red pepper and put into processor with chillies and pulse again

  1. Dissolve 1kg jam sugar in 600ml of cider vinegar in a wide medium sized pan over low heat without stirring

  2. add chillie mixture to pan, bring to the boil and leave it boiling for 10 mins

  3. Take the pan off the heat and leave to cool, will become viscous and then jellly like once cooled
