Help needed for diabetic cake/pudding ideas, please

I have everyone coming over to us this Christmas, including my dad who is diabetic and would really appreciate any recipes for cake and also ideas of what I can give him for pudding, after dinner.
Unfortunately he does have quite a sweet tooth and I don't want him to feel a little left out when we're all tucking into trifle and cheesecake.
Thanks.

Personally, I'm diabetic and I just have a small piece of the full sugar stuff. I find most diabetic sweets recipes to be yucky!!

You might want to ask him what he wants, as he might not want you to do a 'diabetic' sweet.

Thanks but he was only diagnosed last year and is very strict with himself. He's got a nasty cold at the moment and won't even take Lemsip or anything similar.

In that case, go to the Diabetes UK website and see what recipes they have.

Thanks but have looked at the website and it's not really any help.
Infact I very nearly ordered him some turkish delight from there but phoned them first to double check they'd be suitable and was told all their confectionary, biscuits and cakes are NOT suitable for diabetics.
So bumping this,if anyone has a nice recipe please.

These biscuits are supposed to be delicious. They have several different sugar free biscuits.
(not really what you are looking for, but yummy!)
They are in good health shops.

If you make trifle with sugar free jelly, and Splenda in the custard and cream, then he could enjoy that along with everyone else, and it wouldn't taste any different.

I make a cheesecake with a ground almond crust, and a filling of cream cheese and sugar free jelly (double strength jelly) beaten together that is very nice - started doing it when friends were doing Atkins
