stuffed mushrooms any idea's?

Delia Smith I am not, thinking of doing a nice starter to dinner tonight for DH and thought I would do stuffed mushrooms, but stauffed with what and how? Any idea's. I do not have a deep fray fryer. We love most things.

Get those huge 'Portobello' mushrooms, one or two per person. Take out the stalk and chop finely. Chop a couple of spring onions and fry with a clove of garlic, add mushroom stalks (and an extra normal mushroom or two if necessary), fry gently and when soft add a load of chopped parsley (couple of tbsp) or other herbs and a load of parmesan. Get big mushrooms and stuff. Oven bake for about 20 mins. You can ring the changes by adding a slice of goats cheese in the mushroom first, and not adding parmesan to the mix. Use the goats cheese without a rind. Or roule would do too, if you don't like goats cheese. You could also add breadcrumbs to the stuffing, whizz a slice of bread in the liquidser or processor.

Other easy starters include smoked salmon, Jamie Oliver does it on a platter with cucumber peeled and then sliced with the peeler. Top with creme fraice and black pepper and wedges of lemon.

S Conran! Breeze, I just get a big Portobella mushroom each, drizzle with olive oil, crushed garlic, salt and pepper, grill for 10 mins and serve on some rocket or other green salad. Really easy and nice.

We usually have couscous in our stuffed mushrooms (not that we have them that often mind!)

Lovely with onion, chopped tomato, garlic, ham, cheese, whatever you can find in the fridge really!

I do mine with chopped cooked bacon as well as the other stuff. And after cooking in oven sprinkle a bit of strong grated cheddar (or you can crumble a little stilton) over top and stick under grill for 30 seconds Yummy.
