Clementines - What can I do with them?

Our supermarche routinely gives away free food when you spend $60. This week we have 2 boxes of Clementines. We are unlikely to eat them before they go bad, so in the hope of not being wasteful, what else can I do with them?

I have some preserving jars already, so I can make something in the preserve spectrum, or anything that can be frozen.

Any ideas?

A clementine marmalade would be nice. I don't have a recipe though.

If you invite some friends round you could try this.....?

12 juiced clementines
6 tsp Campari
1 bottle chilled champagne/sparkling white wine/grape juice

Divide the juice between 6 glasses and add 1 tsp (5 ml) Campari to each. Top up with the champers.

I haven't tried it, yet, but thought it sounded nice and refreshing for Christmas morning - maybe it is possible to juice the fruit and freeze it until you need it?

Thankyou all. mmm the drink sounds lovely. will try to juice some to save for that and will look for clementine cake recipe.
