How far in advance can I make these?

I am having between 20-25 people (per day) over the 3 days of Christmas so I will be making lots of food.

What I need from you girls is how far in advance can the following be made.

Xmas day starter
Leek, Asparagus, Smoked Salmon Terrine x 1 (cream cheese based)

Fish terrine x 1 (cooked then served chilled)

salmon and prawn terrine x 1 (cooked then served chilled)

puddings (to last all 3 days)

Baileys chocolate cheesecake
Trifle
Chocolate log
Carrot Cake cheesecake
Raspberry mousse
Jelly
dense choc cake - Nigella
Chiffon cake
Lemon mousse

Forgot to mention that my mum lives nearby so will have use of her fridge too.

I'd say just about all you suggest are the types that are probably Ok only for a day or two (except dense Choc cake (although gets eaten quickly). Lots of mouses / jelly / cheesecakes. Cheesecakes generally are better the next day and the day after is OK too but not at its best. Choc log can deffo be made in advance - put choc ganache type covering will be fine for a few days.

The fish terrine type things not too good to keep them hanging around.

Puds - what about some sort of tarts / meringue type desserts - can be made further ahead.

You have given yourself quite a lot to do there .

Meringues and pavlovas can be frozen and defrost really well.
