egg free pancakes??

Does anyone have a tried and tested recipe for pancakes made without egg?

I make normal pancakes for 2 of my dc but another one has an egg allergy and I would love to make her some pancakes for christmas morning.

This is a great recipe for sweet pancakes taken from a fab booked called "veagn with a vengeance" by Isa Chandra Moskowitz.

150g plain flour
2 tsp baking powder
half tsp salt
1 tsp ground cinnamon (optional)
2 tbsp any mild tasting vegetable oil plus oil for the pan
5 tbsp water
300ml plain rice or soy milk
1 tsp vanilla extract
2 tbsp pure maple syrup

Sift together dry ingredients. Combine all wet ingredients in a separate bowl. Add wet to dry, mix until combined but do not overmix or the pancakes will be tough,

Oil a large frying pan and pre-heat over a medium heat for about 2 minutes. Do not add too much mixture to the pan at a time - a thin layer works best = too thick and it will be rubbery! You need to experiment with the first few to get the thin-ness right! I would have a trial run before xmas morning though!

(I also do them sometimes my regular way, i.e. flour+milk, just leaving out the eggs. Seems to work ok.. The above recipe looks great though - will give that a try myself too!)
