Anyone have any recipies for Diabetics

My Dad has just been diagnosed with Diabetes. I have just made fudge for xmas gifts and feel sad that my dad cant have any as its made from bucketloads of sugar!

Anyone any recipes for an alternative i can make for him...

Just something small, like sweets, biscuits.

Plus it has to be easy as im no Delia!

Sweets and biscuits for diabetics aren't a great idea. Could you make him cheese straws or something? (They're a bit high fat, but still better than sweets.)

As he's recently diagnosed, his sugar numbers (and moods) will be all over the shop.

Could you knit him a hat, instead?

And buy him a book on low-GI eating?

Oh, or you could do a healthy cake sort of thing - I do carrot cakes and courgette/lemon cakes, that sort of thing, and they're pretty diabetic-friendly, particularly uniced. You just want to be using half wholemeal flour half white, and he shouldn't eat that much of it, anyway.
