I was hoping for something a bit more involved and that i can give to an 8 mnth old.

I wonder if coconut custard would be good?

You will need to grate it and squeeze with water to get coconut cream out of it, which can be a bit of a faff.

Coconut custard would be nice.Easier to used tinned coconut milk though.
