deserts /puddings for diabetic using splenda (or something else other than sugar)

Help! Can anyone help me with a couple of receipe suggestions for my dad who's been diagnosed with type 2 diabetes. I've bought a pack of splenda and just tried making meringues - but they taste hideous! I'm looking for something for christmas day - preferably something that I can freeze and then pop in the oven at the last minute. Also cakes etc for beforehand.

banana bread is delicious (its not like bread its like cake) - can he have raisins? I like banana bread with custard (birds powdered custard can be made with sweetener)

I can type the recipe if you like?

Good idea Red Santa. We make that with DD1 quite a bit so no need for a recipe - hopefully. Do you know if you can freeze it (in my attempt to be christmas organised this year I'm freezing everything)?

this is very nice too chocolate and berry roulade - i make mine with cherries

but most desserts on here will be using splenda instead of sugar.

my weight watchers book says for banana bread freezing recommended.

I don't do ww - but i love the recipe for banana bread (i used to do it with sweetener when i was on ww, but now I just use sugar)

Red Santa you are my hero . Thanks so much. The choc and berry roulade sounds great for christmas day (I want something that will look great - to make up for the fact that he'll not be getting his christmas pudding). I'll look at the others too.
