I made a load of fudge with the DC this afternoon, and despite cooking it for what seemed like forever, it is still a bit soft.
We did not have a thermometer so we did the dropping it in cold water it said in the recipe....

It tastes delicious, and I have cut it into tiny squares and put them in petit-four cases, but will it firm up any more?

I've always left my in fridge to cool off overnight.
long as you got the soft ball stage.. it should be fine.. give it a chill. HTH

BCNS, does yours go hard at the fridge stage, and then stay hard?

It's supposed to be for presents / Christmas fair, so not going to be eaten straight away!

yes and yes it stays hard... throw it in the fridge over night tonight.. have a look in the morning.. as it will stay like it is in the morning.

Just checked it and it's gone quite hard already! Have chucked it in the fridge anyway!
