Leftover chicken bake - what sauce?

I have some leftover cooked chicken fillets and some leftover mash potatoe. I also have some nice butternut and cauliflower that need to be used up so I thought I'd bung them in a dish and bake them in the oven together. But it needs some kind of sauce? Any suggestions? I was leaning towards maybe a light onion sauce?

Yes onion sounds nice or how about a plain white sauce, or you could add some cheese to it. I made something similar last week and it was yummy.

Thanks Jik. I would do cheese but trying to cut back - have a bit of a cheese addiction which culminated on the weekend on DP and I accidentally eating most of a block on a sunday morning !

I'll stick with the onion sauce idea - onions are supposedly excellent for you so I'm taking the gap to eat more of them!

Know what you mean, I'm a complete cheese addict!
