What on earth do I do with a bag of frozen spinach?

I've just bought a big bag of organic frozen spinach. I'm not quite sure why. What can I do with it?

I had the vague idea of mixing some into ds's ubiquitous tomato pasta, but that's about it. Any suggestions for mouthwatering, scrummy, delicious things to do with blobs of frozen spinach?

I make a quick pasta sauce with it that the kids like - cook spinach then stir in a couple of spoonfuls of pesto and some cream or creme fraiche. Serve with the pasta and parmesan cheese. Very quick and my kids like it!
I love spinach - particularly if you stir in a spoonful or 2 of cream. It's great with smoked salmon.
Moondog - that recipe for chickpea and spinach curry sounds really good! I've been looking for a veg curry recipe - though I really wanted one using butternut squash. However, think yours might get tried out this week!

fry an onion and some garlic; add thawed, strained spinach till hot. Mix in cream cheese and double cream till melted. Finish with nutmeg. Delicious pasta sauce. (Not low cal, obviously!)

scotlou, good one with squash would be something similar. Start with same onion/ginger/garlic/curry paste base, then add chickpeas,carrots,squash,potato and green beans. (Squash and green beans a little later than others or similar.) Add a tin of coconut cream,some turmeric and simmer. Could also add a tin of toms. Some brown sugar (generous teaspoonful and a good dash of Thai fish sauce would make it even better.

when I was pregnant I lived on creamy buttery mashed potato with boiled spinach mixed in. Mmmmmmmmmmmmmmmmm.

boil, drain water, add to mascarpone cheese, grate a little nutmeg on it, serve on top of baked potatoes - my dt's love this. It also makes a great pasta sauce for adults with a little white wine thrown in for good measure

yummm. it makes the best soup(pinched from covent garden soups)thai. I think you cook up onion and potatoe with cumin and garlic, add stock (could use thai flavoured one e.g chilli, lime, lemongrass etc but a veg stock is ok)and cook then add spinach and creamed coconut and blend. serve with fresh coriander and lime.

what is it about mash and pregnancy need more shoes? i am amazed ds wasn't growth retarded cos i think mash with peas mixed in was all i ate

Just noticed the link to this, snafum where did you buy your bag of organic frozen spinach from ? Am interested in buying frozen organic food and have problems getting hold of it.

Poppy, I got it from Waitrose.

I have been busy stirring it into all sorts of things over the last couple of weeks. Ds is just waiting for green bits to appear in his yoghurt...

mix with a tub of ricotta and then wrap it all up in a jus-roll puff pastry thingie and stick in the oven for c. 40 mins. Lurvely with boiled pots (and even does for dinner parties)

put a spoonful on a hot buttered muffin and top with a poached egg (and hollandaise sauce if you have any). Mmmmmmm.

fry some chopped onion, add some garlic, salt cumin, coriander, haldi, and the spinach. add some green chillies as well if you fancy. two tomatoes. simmer till tomatos are doine.
chop and fry some paneer.
yummy sag paneer!

defrost it and squeeze out as much water as possible, then use it in an omlette, with some other veggies & cheese on top

Yum Yum..
olive oil in pan, v hot, thro in some mustard and cumin seads and wait for them to pop.
Now add salt, pepper and some 1/2 boiled pots that have been diced. Fry with lid on for 10 mins. Add other spices to taste.
Melt butter in pan and add spinach, add to Pots and mix.
Now make a cream sauce, fry a few eggs SERVE and you have a top meal! Sort of an alloo saaggy type thing thats developed over the years..
