Pork Belly - what do I do with it?

I got a bit carried away at the meat counter in sainsburys and bought some pork belly - I have found various recipes for roasting it with garlic, or rosemary or fennel seeds.

Has anyone cooked it at home? What would you recommend I do with it?

Personally I would put it in the bin. It brings me straight back to horrendous school dinners - a tiny blob of grey meat surrounded by vast rings of glistening fat. Served with cabbage.

Thanks for the offer f the recipe, but I think I would really like to roast it, I'm just not sure what to roast it with.

I love pork belly.. it's so over rated..

lay out flat, roast on a bed of leeks and sliced cooking apples.. serve with red cabbage and mashed potato yummm

Also, the one I posted is good because a lot of the fat drips out which you can then discard (although don't let anyone accidentally dump the roasting tin in the sink, pouring the fat down the sink when you weren't looking which then solidified over the meal and resulted in me spending an hour delocking the sink with boiling water).

fennel seeds are delish with pork belly so i'd definitely try one of the recipes you have. there is a rick stein recipe with fennel seeds which is absolutely wonderful.

After all those choices, I'm going for rosemary and garlic, cooked ontop of halved onions. If we like it, I am definitely going to give all the others a go thoiugh, as they sound yummy. thanks so much for all the suggestions
