Altering recipes - how much is OK?

So those of you who can cook....
Can you please tell me how to/how much altering I can get away with
eg I want to make a banana cake, can I just use a loaf recipe and put it in a tin? how do I work out what the cooking time is?

Alternative is to make a carrot cake/hummingbird cake, I'd quite like to use sultanas and pineapple (as well as carrot and banana) can I just take my recipe for carrot cake and add some of the above and not adjust anything else? (other quantities/cooking times etc) if I add grated orange rind, allspice, cinnamon and nutmeg am I just making a real hash of the flavours?

I've taken about 4 different recipes and put all the ingredients together but something is telling me not to!!

I think the questions seem so simple but have tried to find answers everywhere with no luck which is making me think I'm very wrong and about to have to dash to the supermarket for a cake sometime soon!!!
