Easy sweet pastry recipe wanted

Please can I haev a tried and tested sweet (or plain) recipe for pastry for things like mince pies and jam tarts etc.

And will it freeze?

My mum has a great recipe for mince pie pastry - will find it.

Viennese Almond Pastry

9oz plain flour
Pinch of salt
1oz ground almonds
6oz hard margarine or butter (I use block Stork)
3oz castor sugar (I don't use as much as this, at most 2oz)
Grated rind of half a lemon
2 tbsps single cream, top milk or evap (never tried evap here)
1 egg yolk

Mix flour, salt, almonds lemon rind and sugar in a bowl and rub in the butter (or use processor). Mix the yolk and cream/milk on a saucer with a fork then add to the dry ingredients and mix to a dough. (It's quite soft). Wrap in foil and chill at least 1 hour.

I can't remember how long I cook them for - probably about 15 min at a medium heat - or at least I check them then.

I bought some mincemeat today and will be making mince pies soon .

9 oz plain flour
5 oz butter
1-1.5 oz caster sugar
1 egg yolk
couple of tablespoons water

rub together the flour and butter until it resembles fine breadcrumbs. stir in the sugar.
Add the egg yolk and use a knife to mixe it in.

then gradually add water (a little at a time) and bring together with your hands to make a dough.
Wrap in clingfilm and refrigerate.

I imagine it should freeze as you can buy frozen pastry in the shops... hth

Don't know whether it freezes - will have to ask my mum.
