looking for inspiration for things to do with leftover roast beef...

HAve left over roast beef - enough for 2 meals I would think.

Am lacking in ideas for what to do with it.

Any ideas?

but need a full meal - thinking of maybe some kind of stirfry with egg/rice/peas?

My mind is to tired to think at mo.

rissoles? Are very yum with nice gravy and green veg.

cut into strips, stirfry with peppers onions and aubergine. Garlic, paprika, oregano, cumin and chilli

Serve with warm tortillas, green salad, guacamole, salsa and soured cream.

was going to suggest something v similar devil1!; other option is in a thai style salad. - make a dressing with lemon/lime juice chilli, ginger and the like. toss over some shredded veg (and perhaps rice noodles) and serve the beef either along size in slices or on top in strips
