What do I do with chicken bones?

I'm useless in the kitchen! I have a pile of chicken bones and have a vague memory that I can do something with them! Soup? Stock? If so, how? I need to learn some cooking skills to pass onto ds!!

Put in large pan with peeled but whole onion and carrot, maybe a bayleaf and some peppercorns. Bring to boil; ideally skim off any scummy stuff at this stage. Simmer for an hour or two with lid on (and DONT forget and let it boil dry.) Strain into a bowl, fridge overnight, then you can take the hardish fat off the top.

Thats the stock... reduce if its too watery, add more if too strong. Then you need a soup recipe, or good for risotto.

I always boil/simmer mine with the lid off to help reduce the stock and intensify the flavour, you can always top up with boiled water if getting too low.

Veggies for stocks... I always add, small onion, chopped in half peeled, 1 carrot chpped in half, Celery stalk, thyme, bay leaf, salt, black pepper.

You can make a a nice chicken and sweetcorn soup! And its really easy once you have the stock & a little left over chicken off the bones. Just add sweetcorn! cook through for 20 mins then drop in egg white (of one egg) while stirring. et viola
